Pennette alla Caprese

Yes romantic. Food by itself is delectable, enjoyable and fulfilling. When you then accompany it with a suitable wine you have a perfect marriage.
The dish of the month is light and summery, like summer eating should b. You get the summer flavors, such as garden tomato, bail and good extra virgin olive oil. It also pairs two stapes of Italian cooking; mozzarella and parmagiano cheese. I would pair this dish with a light wine, such as a chardonnay with its fruity aroma or a soave. This dish should be made in 30 minuts and its also ?? uncomplicated.

Ingredients
v1lb. Penne
vl lb. fresh tomato (diced)
vgarlic (3 cloves)
v1/2 cup extra virgin olive oil
v1 medium onion (chopped)
v1/2 lb. fresh mozzrella (cut into to small cubes).
v6 leaves basil
v1/2 cup parmigiano
vcrushed red pepper (optional)
vsalt & pepper to taste


Instructions
1.Sautee onion and garlic until golden.
2.Add tomato, basil and salt and pepper.
3.Lower flame for 20 minutes.
4.Cook the pasta in salted water al dente.
5.Drain well and pour it in a saute pan.
6.Toss it with the fresh mozzarella, parmigiano and serve!



Granseola (Crab)

This is a superlative sauce that will bring you lots of compliments. This sauce is rich and flavorful and can be served with a good white wine or medium body red wine.
Another particular fact that works in your advantage is that this sauce can be made and will keep for up to two weeks without losing the superlative quality and goodness.

Ingredients:
v1 medium onion (chopped)
v1 lb. of top quality Maryland crab meat
v1 lb. of ripe plum tomato (cut in strips)
v1 teaspoon of tomato paste
v6 cloves of garlic sliced and chopped
v1 cup extra virgin olive oil
v1 glass dry white wine
v6 leaves of fresh basil
v1/2 bunch of Italian parsley (chopped fine)
vTouch of crushed pepper flakes
vSalt and pepper to taste



Steps:
1. In a large sauté pan heat the oil and add onion and garlic until golden
2. Add white wine and reduce for 2 minutes.
3. Add the rest of the ingredients except the crab meat
4. Lower the heat and cook for 30 minutes
5. Add the crab meat, cook for 5 more minutes and the sauce is now done.
